Beast from the East Stew

Where is all this snow coming from? We need another cold weather warmer now. Bring in the stew

Serves 6-8

750g Stewing Beef
75g Plain Flour
250g Chestnut Mushrooms, quartered
1 Large Onion, chopped
1.25l Beef Stock
1 Sweede, Chopped
1 Turnip, chopped
1 tbsp Tomato Puree
2 tsp Dried Rosemary
2 tsp Dried Parsley
2, Garlic Cloves, crushed
1 tbsp Dijon Mustard
Couple of Shakes of Worcestershire Sauce
250ml Glass of Red Wine
Olive Oil
Salt and Pepper

1. In a freezer bag add the flour, salt and Pepper and the beef. Close up the bag and give a shake until the beef is coated. In a frying pan add the olive oil and heat over a medium heat and add the beef in batches. Cook the beef until it has browned. Put aside for later. 

2. In the frying pan add the onion, garlic and mushrooms. Fry for 2-3 minutes until onions have softened. Add more olive oil if not much oil in pan. 

3. In a slow cooker add the beef, onion, garlic, mushrooms and rest of the ingredients. Give this a good mix.
Leave for the following:

- Low - 7 - 8 Hours
- Medium -  5 - 6 Hours
- High - 3 - 4 Hours

4. Serve with mash and carrots

Spinach and Mushroom Gnocchi Bake (V)

I haven't done a Vegetarian recipe in a while and had the chance to test this recipe out. Went down a treat. Served with salad and garlic bread. It was bursting with flavour. 

Serves 4-6
500g Gnocchi
250g Chestnut Mushrooms, quartered 
1 Large Onion, diced
2 Garlic Cloves Crushed
200g Spinach, washed
Knob of Butter
75g Mature Cheese, grated
Salt and Pepper
1 tsp Fresh Thyme

Sauce
25g Butter
2 tbsp Plain Flour
400ml Whole Milk
Sprinkle of Nutmeg
250g Ricotta Cheese

1. Preheat the oven to 200c/180c fan assisted. 

2. Fry the onion and garlic on a medium to low heat for 3-4 minutes or until the onions soften. Then add the mushrooms and fry for 5 minutes, stir regularly. Then add the thyme and cook for a further minute. Take off heat.

3. In a large pan, melt the butter. Once melted, whisk the flour to create a roux. gradually add the milk while whisking. It should be a thick sauce consistency. If too thick add more milk. Then add the ricotta. Mix on a low heat until combined. 

4. Gradually add the spinach about a handful at a time. When wilted add more spinach until you have used the 200g. Then add the Gnocchi to the pan. And heat through for a couple of minutes.

5. Add the contents of the frying pan to the large pan, add salt and pepper and give a good mix. Then pour into an oven proof dish. Add the grated mature cheese to the top. Put in the oven for 20-25 minutes, until golden brown.

Slow Cooked Bolognese

Bolognese is one of those mid week meals that we all love. But sometimes making it can be a drag especially after a long day at work.. Sometimes you just want to throw it all in a pot, leave it to cook and then enjoy later. Well lucky for you I have a recipe for slow cooked Bolognese. Fry off a few things then stick it all in the slow cooker for later.

Serves 5-6

1 Onion, Diced
2 Garlic Cloves, crushed
500g Minced Beef
100g Bacon Lardons
1 Red Pepper, chopped
1 Carrot, chopped
8 Mushrooms, sliced
100ml Beef Stock
2 tbsp Plain Flour (to thicken)
1 Small Glass of Red Wine
2 Cans of Chopped Tomatoes
2 tbsp Tomato Puree
Splash of Worcestershire Sauce
1 tsp Oregano
2 Bay Leaves
1 tsp Thyme
Olive Oil
Salt and Pepper, to season

Serve with a bit of parmesan

1. Take the pot out of the slow cooker and put on the hob. Heat a bit of olive oil, Then add the beef mince and bacon. Cook til browned. Then add the garlic, onions, peppers and mushrooms, cook for a further 2 minutes.

2. Put back in the slow cooker and put on a low heat. Add the rest of the ingredients to the pot and give a final stir. Leave to cook for 6-8 hours.

3. Just before the Bolognese is done, boil your favourite pasta (follow the instructions on the pack). Top with grated parmesan and it's ready to serve.

Coq Au Vin

So I got a new toy for the kitchen. The time saving slow cooker! For my first outing, I decided to make Coq Au Vin.

Serves 4

600ml Red Wine
300ml Chicken Stock
4 Large Chicken Thighs
150g Smoked Bacon Lardons
2 Bay Leaves
2 Cloves Garlic
2 Sprigs Rosemary
2 Sprigs Thyme
150g Baby Chestnut Mushrooms
4 tbsp Plain Flour
8 Shallots, peeled and left whole
2 Carrots, chopped
25g butter

1. Put the flour in the bag with the salt and pepper. Add the chicken thighs to the bag and shake well till the thighs are covered.

2. Take the pot out of the slow cooker and put on a medium heat add the butter till melted and covers the base of the pot. Add the chicken thighs and flour and fry to seal the chicken (all sides should be white). Add the bacon to the pan and fry for a further 2-3 minutes.

3. Add the remaining ingredients to the pot, return to the slow cooker and put on a low heat for 7 hours. If the sauce is too watery then add flour and leave for 20 minutes.

4. Serve with mashed potatoes

Beef Wellington

Valentines Day is approaching... Want to impressing your significant other with your hidden culinary skills. Then look no further. This looks delicious, has steak and simple to make.

Also for you single people (such as myself) who want to treat themselves to this then its easy to make for yourself too. As a great queen says 'If you can't love yourself, how in the hell you gonna love somebody else?  Can I get an amen?'

Serves 1/2

Fillet Steak 8oz x 1/2 (best from local butcher)
1/2 Tbs of Dried Porcini Mushrooms (Soak before cooking)
1/2 Handful of Chestnut Mushrooms. sliced
2/4 Slices of Prosciutto
Ready Roll Puff Pastry
1 Egg, beaten in a bowl
Butter
Olive Oil

1. Preheat the oven to 200c/180c fan assisted. Line a baking tray with baking paper. Roll out the puff pastry and layer the prosciutto onto the pastry.

2. Heat some butter in a frying pan over a medium heat. Add the mushrooms and cook for 5 minutes or until softened. Put onto kitchen roll. Then put on top of the prosciutto.

3. Then add olive oil to the pan and butter if it needs it. Season the fillet. Add the fillet steak to the pan. Cook until browned all over. Then remove from the pan and rest for 10 minutes.

4. Add the steak on top of the mushrooms and wrap the pastry round the steak. Place the sealed side onto the baking sheet on the tray. Egg wash and put in the oven for 20 minutes. The outside should be golden brown. Leave to rest for 10 minutes.

I recommend serving with Dauphinoise potatoes and seasonal green vegetables. Wine accompiant I go for a full body red wine.

Movember 4 Course - Starter - Garlic Moshrooms

I'm doing Movember this week and since I am not a sporty/athletic person, thought I would make the next 4 weeks a course for the ultimate meal for any Mo. Starting things off with a lovely starter which is super yummy and simple to make. 

Serves 2

250g Chestnut Mushrooms, cut into quarters 
Small Glass of White Wine
3 Shallots, chopped
2 Garlic Cloves, crushed
100ml Double Cream
2 Ciabatta Rolls, sliced in half lengthways
Salt and Pepper
Knob of Butter
Parsley, roughly chopped

1. Warm a frying pan with the knob of butter.

2. Fry the garlic and shallots for about a minute on a medium heat so they begin to soften.

3. Add the mushrooms (add more butter if the pan looks dry). Fry for about 5 minutes so they change colour. Add the ine to the pan and reduce the heat. Heat for further 5 minutes, this will allow the wine to reduce.

4. Add cream to the pan heat through for a couple of minutes. Also season if required. While the cream is heating through, put the ciabatta in the toaster or under the grill until golden.

5. Serve the mushrooms on the ciabatta with a sprinkle of parley.

Chicken and Pepper Stir Fry

Another quick and easy recipe, full of vegetables and plenty of flavour. Also has a bit of a kick to it. If you aren't into spicy food take the chilli out.

Serves 4

2/3 Chicken Breasts, cut into strips
1 Red Pepper, sliced
1 Green Pepper, sliced
1 Red Chilli, finely sliced
1 Broccoli, each florette quartered
2 Garlic cloves, crushed
4 Spring Onions, cut lengthways
6 Mushrooms, sliced
1 Onion, sliced
4 Nests of Medium Noodles
5 tbsp Soy Sauce
2 tbsp Sesame seed oil
1 tsp Cumin
1 tsp Ground Coriander
1 tsp Olive Oil

1. Add the olive oil to the Wok and put on a medium heat. Add the chicken to the pan and cook until the chicken is white on the outside, then add the peppers, garlic, broccoli, onion and mushrooms to the pan. Cook these until softened.

2. While this is being done, boil a pan of water and put the noodles in. Drain once they have cooked through.

3 Add the chilli and spring onions to the pan and cook for a further 2 minutes. In a bowl add the soy sauce, sesame seed oil, cumin, ground coriander and stir.  Pour this into the wok and stir thoroughly so everything is covered and is heated through.

4. Add the noodles to the pan and stir thoroughly. Serve.

Spicy Bean, Mushroom and Pepper Quesadillas (V)

2 Vegetarian Dishes in a row.... Wow I am on a roll. This one is Mexican in origin with plenty of spice and flavour. Have it as a main meal with some rice, guacamole and sour cream or for lunch

Serves: 4
Dash of Olive Oil
1 Onion, finely sliced
1 Garlic Clove, crushed
1 Red Pepper, diced
5-6 Mushrooms, sliced
Coriander, roughly torn
100g Cheese
Can of Red Kidney Beans
Can of Pinto Beands
1 tsp Smoked Paprika
1 tsp Cumin
1 tsp Chilli Powder
8 Tortillas
Salt and Pepper
200ml Salsa, Plus Extra
Guacamole (Or Make Own Here)
Sour Cream

1. Heat the oil in the frying pan. Fry the peppers and mushrooms in the pan for about 5 minutes. Transfer to a bowl.

2.  Add extra oil if it needs it. Add the onions and garlic to the pan until they begin to soften (about 5 minutes). Add the paprika, cumin and chilli powder and stir in. Add the beans with a dash of water and heat through for about 5 minutes. Get a masher and mash the beans, onions and garlic together. Taste and Season. Mix with the pepper and mushrooms.

3. Take a tortilla and spread the bean mix on the tortilla. Add a bit of salsa to the top. Add the cheese and coriander. Top with another tortilla. Wipe the frying pan and dry fry the tortilla on each side for a couple of minutes. Repeat this 3 times. Serve with salsa, sour cream and guacamole.

Mushroom Stroganoff (V)

A variation of the Russian classic, Mushroom Stroganoff is creamy and tasty. Perfect with either Tagliatelle or rice.

Serves 4

250g Flatcap Mushrooms, sliced
250g Chestnut Mushrooms, quatered
1 Small Glass of White Wine
1 Onion, finely sliced
2 Garlic Clove, crushed
2 tsp French Mustard
2 tsp Paprika
Handful of Fresh Parsley, finely chopped
200ml Double Cream
300g Tagilatelie or Rice
Olive Oil
Salt and Pepper
Shake of Worcestershire Sauce
Squirt of Lemon Juice


1. Put a large pan of water on to boil and boil the paste or rice for the instructed time.

2. While the pasta/rice is boiling, get a large frying pan and heat olive oil in the pan. Add the onions and garlic, fry until softened. Add the mushrooms and paprika and fry for 5 minutes.

3. Add the cream, wine, Worcestershire sauce, lemon juice and French mustard to the pan. Simmer for about 5 minutes. Season to taste and add the parsley to the pan for 30 seconds while stirring. 

4. Drain the pasta/rice from the pan, serve onto the plate and add the sauce on top. Serve.

Tip: If the sauce hasn't thickened, get a teaspoon of cornflour and put it into a glass and mix with a dash of water. Add to the pan, leave for a couple of minutes and the sauce should thicken.

Mushroom Risotto (V)

Risotto is a bit tricky but when you cook it right it tastes delicious. An italian dish which most people love. Also if you are a mushroom lover then add more porcini mushrooms.

Serves 4

1 litre of Vegetable Stock
125g Unsalted Butter
200g Mushrooms
50g Porcini Mushrooms
150 ml White Wine
200g Risotto Rice (I used Arborio)
50g Parmesan, plus extra to serve
1 tsp Thyme
2-3 Garlic cloves, crushed
1-2 Onions, finely sliced
Salt and Pepper

1. Melt the butter in a large saucepan. Add the onion and garlic to the pan and fry for about 5 minutes.

2. Stir in the mushrooms and thyme and cook for about 5 minutes to heat through.

3. Pour the wine into the saucepan and increase the heat. The wine needs to disappear to remove the alcohol.

4. Stir in  the rice and fry for about a minute.

5. Add a ladleful of stock to the pan. Wait until the stock has absorbed and keep adding a ladleful of stock until its all gone. This should take 10-15 minutes.

6. Once the stock has gone mix in the parmesan cheese. Leave it to rest for a couple minutes then serve with extra grated parmesan.

Beef Bourguignon

This is a traditional French dish which is lovely to make for Sunday lunch/dinner. Its really easy to do as you just throw everything into the pot and leave it to cook in the oven. One of my favourite dishes!

Serves 4:

  • 600g Beef (You can either get it chopped up into cubes already or get the stewing steaks and cut them up yourself)
  • 3 rashers of bacon
  • 10 Shallots (Left Whole)
  • 300ml Beef Stock
  • 8 Mushrooms
  • Rosemary (Dried or Fresh)
  • 1 Bay Leaf
  • 175ml Red Wine
Serving Suggestions:
When I cooked this, I had boiled carrots and broccoli with a couple of slices from baguette. I prefer to use the baguette bread as it soaks up the excess sauce however mash potato would be a good complement the dish. 

  1. Preheat the oven to 200c or Gas Mark 6
     2. Take a hob and oven proof dish/pan and heat some oil. Add the shallots and bacon and fry it for a couple of minutes. Chuck in the beef and fry if off until you can't see pink.

     3.Add the flour and stir in until it is evenly covered the contents.

     4. Then pour in the red wine and stock.  Bring this to the boil and the liquid should start to thicken.

     5. Add the mushrooms, rosemary and bay leaves to the dish/pan .

     6. Place the lid over the dish/pan and cook in the oven for an hour and a half. Then your ready to serve.
