Crempog (V)

Made these on Shrove Tuesday. Different from your average pancake. They are surprisingly light and fluffy. Serve with your favourite fruit and golden syrup.

Makes 10-12 Pancakes

Mixture
450ml Buttermilk
50g Unsalted Butter
275g Plain Flour
75g Caster Sugar
1tsp Bicarbonate Soda
2 Eggs
Pinch of Salt
1 tbsp Vinegar

Knob of Butter

1. Heat water in pan and place a bowl over the water. Add the butter and buttermilk. Heat through until the butter has melted and mixed together.

2. Remove the bowl from the heat and add the flour and mix well. Leave the mixture till it has cooled down.

3. In a separate bowl add the remaining ingredients and beat well until combined. Add this to the mixture and mix until you get a smooth batter.

4. To cook the pancake take a baking stone or frying pan and heat a bit of butter. This should be over a medium heat. You will need about half a serving spoon of mixture for a pancake (don't want the the pancake too thick). Cook until each side is golden brown (roughly about 5 minutes on each side).

5. You can have them with lemon and sugar, Nutella or my personal favourite blueberries and golden syrup (or whatever you want, your pancakes, your way)

Movember 4 Course - Main Course - Lamb Shank with Mo Sauce

So the Main course I am serving delicious fall from the bone lamb shanks with Mo Sauce (well Mint Sauce but we are going with the Movember theme)

Serves 2

2 Lamb Shanks
Olive Oil
3 Carrots, peeled and chopped
1 Onion, diced
2 Garlic Cloves
125ml Red Wine
500ml Lamb Stock
Sprigs of Thyme
2 Bay Leaves

Mo Sauce
Bunch of Mint
Salt and Pepper
5 tbsp Hot Water
5 tbsp White Wine Vinegar
1  tbsp Caster Sugar

1. Preheat the oven for 200c/180c fan assisted. Take a large casserole dish or large roasting tray and place on hob. Heat the olive oil in the dish/tray. Add the shanks to the dish and add salt and pepper. Brown the shanks all over. I would recommend doing this one shank at a time. Remove from pan

2. Fry the onions and carrots until softened (should take 5 minutes). Add the thyme, bay leaves and garlic and fry for a couple of minutes.

3. Add the stock and wine. Add the lamb shanks to the dish. Then add the lid to the pan or cover with fin foil tightly. Then cook for 2 hours so the lamb is tender. When finished leave on the side for 10 minutes to rest and serve with mashed potatoes.

Mo Sauce

1. Grind the salt and pepper on the mint and roughly chop and add to small dish. Then add the hot and let it cool. Once cooled add the white wine vinegar and caster sugar and mix well. You only need a bit of mint sauce on the lamb.

Italian Bread (V)

I haven't baked much bread before so I thought I would give it a go. I wanted to make this one a bit different. I had some olives and Sundried tomatoes left over and thought they should go in and eventually it turned into something delicious.

Makes 1 Loaf

500g Strong White Flour
2 Sachets of Yeast
300ml Warm Water
75g Sundried Tomatoes, quartered
100g Green Olives, quartered
100g Black Olives, quartered
Drizzling of Olive Oil
Few Sprigs of Rosemary
Salt and Pepper

1. Add the flour, yeast, salt and pepper to the bowl. Stir it all together. Create a well at the bottom of the mixing bowl.

2. Gradually add the water into the well in the mixing bowl and stir as you go along. It will become doughy then you will be able to kneed the dough. If the dough is too dry; add more water and if its too wet; add more flour.

3. Knead the dough for about 10 minutes. Personally I find it quite relaxing and is a good way to relieve stress. Put cling film over the bowl and leave for about an hour.

4. Preheat the oven to 220/200 fan assisted. After leaving the dough to rise its time to add the olives, tomatoes and olive oil. You begin by flattening the bread out and putting about a third of the olives and tomatoes onto the dough. Then you begin to knead so the ingredients mix into the dough. Continue doing this until your out of olives and tomatoes.

5. Add olive oil to the dough and knead in. Begin to shape the dough into a long cylinder shape (See below). Add the rosemary sprigs to the top of the dough and make 3 cuts along the top. Sprinkle with a bit of flour and put in the over for 35 minutes.

Tip:

  • Dip in a mixture of balsamic vinegar and olive oil.
  • Want to give your bruschetta that bit more depth, toast the bread and top with the tomatoes, red onions etc.
  • Makes lovely bread for sandwiches and adds that extra flavour. 
  • The oil from the olives and Sundried tomatoes can be used on the bread instead of using olive oil.

French Onion Soup (V)

Something nice and warm after you have been out Christmas shopping. Cheap to make and fairly healthy

50g Butter
3 Large Onions, finely sliced
6 Shallots, finely sliced
Shake of Worcestershire Sauce
2 Glasses of Red Wine
3 tbsp Balsamic Vinegar
2 tsp Thyme
1 litre Vegetable Stock
2 Garlic Cloves, crushed

Garlic Croutons
1 Baguette, cut into slices
2 Cloves of Garlic, crushed
50g Butter
100g Gruyère , grated
Handful of Parsely, chopped

1. Preheat the grill to a medium heat.

2. Heat the butter in a large pan and gently cook the onions, shallots and garlic until softened. This should roughly take about 10 minutes over a low heat. 

3.  Increase the heat slightly and cook for 15 minutes, until the onion becomes dark golden, sticky and caramelised, stirring now and again to stop it catching. 

4. Add the wine and simmer for 2-3 minutes, then add the stock, balsamic vinegar, Worcestershire Sauce and thyme and bring to the boil. Taste and Season. Simmer for 10 minutes.

5. While the soup is simmering, prepare the croutons. Mix the garlic, butter and parsley together. Spread on the bread and put under the grill for 2 minutes. Once the butter has melted over the bread and it's beginning to toast put the cheese over it and put under the grill for a further 3 minutes. 

6. Pour the soup in the bowls, top with a giant garlic crouton.

Eton Mess (V)

A traditional english poudding. The myth was that Eton mess was crweated when a meringue dessert was dropped accidently, and whatever was salvaged was served as a crushed meringue with strawberries and cream.
Meringue

Serves 6

Meringue
4 Egg Whites
225g Caster Sugar
1 tsp Cornflour
1tsp White Wine Vinegar

Vanilla Pod
284ml Double Cream
1 Punnets of Strawberries, cut the stems off
1 Punnets of Raspberries
2 tbsp Icing Sugar

1. Preheat the oven to 180/160 fan assisted. Cover a baking tray with a baking sheet.

2. Using an electric whisk (using a normal whisk is good exercise but takes a long time), whisk the egg whites until it begins to stiffen.

3. Gradually add the sugar while whisking the egg whites. Then when the sugar is used up keep whisking for about 5 minutes. Then add the cornflour and white wine vinegar. It should be stiff and if you tip upside down it should stay in the mixing bowl.

4. Spoon the meringue mix onto a baking sheet. Put in the oven for an hour and 40 minutes.

5. Put the double cream in a bowl then scrape the vanilla pod seeds into the bowl with the icing sugar. Whisk until the cream is stiff.

6. Once the meringue is baked brake up into small bits. Mix with the fruit and cream. Serve.

Bruschetta (V)

A simple starter which is easy to make. Doesn't need any cooking in the oven or on the hob, just prep work and toasting.

Serves 4

300g Tomatoes, finely chopped
1 Red Onion, finely chopped
10 Basil Leaves, torn up
1 Red Pepper, de seeded and finely chopped
2 Garlic Cloves, crushed
Shake of olive oil
Lettuce
Baguette Bread, sliced
Balsamic Vinegar


1. In a mixing bowl, put the basil, garlic, pepper, tomato, red pepper, red onion and olive oil in.

2. Put the baguette bread in the toaster.

3. Put the lettuce leave on the plate, then the bread and put the tomato mixture on the bread. Then shake some balsamic vinegar over the food.
