Apple and Rhubarb Crumble

A classic which goes well with custard. Any UK kid would have had this pudding at one point. Relive the experience or if you have tried crumble give it a go.

Serves 4-6

Fruit Filling
3-4 Cooking Apples, peeled, cored and cut into wedges
4 Stalks of Rhubarb, sliced
1 tbsp Honey
1 tsp Cinnamon
50g Caster Sugar
Water to cover the base of the Pan

Crumble
140g Plain Flour
80g Butter, chilled, cubed
50g Light Brown Sugar
50g Oats
50g Flaked Almonds

1. Preheat the oven to 200c/180c fan assisted. Stew the the fruit by putting a pan over a medium low heat. Put water in to just cover the base and the fruit. Stew for 10 minutes. Stir during this time so it doesn't burn. Add the honey, cinnamon and sugar and give a final stir.

2. Make the crumble by taking a mixing bowl and adding the butter and flour. Rub the butter between the thumbs and fingers. Its a messy business but its so much fun. It should start to resemble crumbs. Then stir in the rest of the crumble ingredients. 

3. Pour the fruit in an oven proof dish. Then cover with the crumble mixture. Put in the oven for 20-25 minutes. The top should be golden brown. Enjoy with cream or custard.

Cherry Bakewell Cake

Dedicated to the first and biggest influence to my baking. All I can say its a lovely cake. Mwynhewch eich bwyd!

Makes 1 Cake

3 Eggs
200g Self Raising Flour
200g Butter, cubed and at room temperature
200g Golden Caster Sugar
50g Ground Almond
1 tsp Vanilla Extract
1 tsp Baking Powder

Topping/Filling
200g Cherry Jam
175g Icing Sugar
6 tsp Water
Handful of Flaked Almonds
75g Glace Cherries, halved (Optional)

1. Preheat the Oven to 180c/160c Fan Assisted. Line 2 20cm Cake tins.

2. In a food processor or by hand cream the butter and the sugar. Once combined mix the eggs and vanilla extract. 

3. Then add the ground almonds, self raising flour and baking powder and mix till combined. 

4. Then divide between the two tins and bake for 25 - 30 minutes or until golden. Leave to cool on a wire rack.

5. For the topping of the cake take the icing sugar and mix with water. Add a tsp at a time and it should be thick and smooth. If too thick add a tsp of water. For assembling the cake, take a sponge and spread the cherry jam and then other sponge. Add the icing on top, if it spills over the side it doesn't matter (gives it a unique look). Scatter with flaked almonds and optional cherries.

Rosewater and Almond Biscuits

Never baked with Rosewater before. It turned out perfectly. One person described them as Turkish Delight in biscuit form.

Makes 26 - 30 Biscuits

1 Large Egg
150g Unsalted Butter, cubed at room temperature
150g Caster Sugar
1 tsp Rosewater
½ tsp Vanilla Bean Paste
50g Ground Almonds
300g Plain Flour, sifted
Couple of Handfuls of Flaked Almonds
1. In a food processor beat the sugar and butter till combined. Add the egg and mix. This will give you a liquid mixture. 

2. Add the rosewater and vanilla paste to the processor. When combined add the ground almonds and plain flour. Mix till all combined. If too wet add more flour and if too dry add some milk

3. Take the dough and wrap in cling film and put in the fridge for an hour. Preheat the oven to 180c/160c fan assisted. Put a piece of greaseproof paper on 1/2 baking trays.

4. Roll out the dough on a floured surface. They should be just under ½ cm deep. I used a 5-6cm flowered cutter but you can make them as big or as small as you want. 

5. Press a few flaked almonds into the pastry and bake for 10 minutes. They should be golden brown. Leave to cool for 10 - 20 mins.

Simnel Cake

A light fruit cake served traditionally around Easter. Hope you are sitting comfortably, time for a religion lesson (fun, right?!?!). Traditionally the number of balls on top of a simnel cake represents Jesus 12 apostles minus Judas. Some have 12 balls of marzipan to include Jesus with his apostles minus Judas. Lesson over, time for cake.

Makes 1 Cake

Cake Mixture
500g Dried Mixed Fruit (must include candied peel)
100g Glace Cherries, halved
200g Butter
200g Dark Brown Sugar
2 tsp Mixed Spice
5cl Cointreau
Juice and zest of a lemon
3 Eggs
225g Self Raising Flour
50g Ground Almonds

Topping
500g Ready Roll Marzipan
2-3 tbsp Apricot Jam
Icing Sugar

1. Preheat the oven to 170c/150c Fan assisted. Line a 20cm Cake tin with greaseproof paper. Cream butter and sugar together. It should be well combined. Then gradually add the eggs till its all mixed together and a runny consistency.

2.Then add the Cointreau, juice and zest of a lemon, dried mixed fruit and cherries, mix well. Add the flour, ground almonds and mixed spice and again mix well. It should be of a thicker consistency. Pour into the cake tin and bake for 1 hour and 15 mins. Test the cake by poking a toothpick through the centre. When pulled out it should be clean. If not put in for 5 minute intervals until baked through, Leave to cool on a wire rack.

3. For the topping, cut 2/3 of the block. Dust the surface with icing sugar and roll the portion out and cut into a circle. With the remaining marzipan make into 12 balls (I made one bigger to put in the centre). Warm the apricot jam in a pan on the hob. Base the cake with the apricot jam and apply the rolled out marzipan. Then dab each ball with apricot jam and arrange on top of the marzipan.

4. Preheat the grill and put the cake under for 5 - 6 minutes until the top is golden brown.

Plum and Apple Crumble (V)

This was another recipe that I did with the plums. I wanted to do a pudding and realised I haven't made a crumble in ages. I altered my apple crumble recipe (before I created the blog). Made the crumble crunchier by adding almonds. So if you have nut allergies, don't add the almonds

Serves 4-6

Crumble
250g Plain Flour
100g Demerera Sugar
150g Unsalted Butter, cubed and at room temperature
50g Ground Almonds

Filling
400g Cooking Apples, Peeled, Cored and
cut into wedges
400g Plums, Destoned and cut into halves
3 tbsp Caster Sugar
1 tbsp Lemon Juice
1tsp Cinnamon

1. Preheat oven to 200c/180c Fan assisted. In a pan add the lemon juice, apples and plums and stew for about 10 minutes or until the apples are mushy. Add the sugar and cinnamon and stir in. Put the fruit filling at the bottom of an oven proof dish

2. For the crumble, get out a mixing bowl and add the sugar and butter and mix with a wooden spoon until smooth. Add the flour and stir for a bit. Then rub the butter/sugar mixture with the flour to create small crumbs. Do this by putting the mixture between the fingers and rubbing between the palms of your hands.

3.  Tip the mixture over the fruit filling and spread equally. Bake in the oven for about 30-35 minutes until golden brown on the top. Leave to stand for about 20 minutes. Serve with ice cream, cream or custard.

Christmas Cake (V)

Ah the Christmas Cake.... Rule of thumb for me is bake when you start seeing the Christmas chocolates in Supermarkets. Perfect with a glass of mulled wine. This will be a 2 parter, this will show you how to make the cake and then later on we show you how to decorate.

250g Currants
300g Raisins

200g Cherries
250g Dates
300g Sultanas
200ml Sherry (or preferred liqueur) extra for feeding
250g Light Brown Sugar
250g Butter
1 Lemon, zest and juice
1 Orange, zest and juice
1/2 tsp Ground Cloves
1 tsp Cinnamon
100g Ground Almonds
100g Flaked Almonds
4 Eggs
250g Plain White Flour
1/2 tsp Vanilla Extract
2 tsp Mixed Spices

1. Preheat oven to 150C/130C fan. In a large pan put the brandy, butter, sugar, dried fruit, zest and juice of the orange and lemon.  Bring to the boil, then lower the heat and simmer for 5 mins. Tip the fruit mixture into a large bowl and leave to cool for 30 mins.

2. Line a deep 20cm cake tin with a double layer of baking parchment. Add the remaining ingredients to the fruit mixture and stir well. Tip into your prepared tin, level the top with a spatula and bake in the centre of the oven for 1 hour and 50 minutes - 2 Hours.

3. Remove the cake from the oven, poke holes in it with a skewer or toothpick and spoon over 2 tbsp of brandy. Leave the cake to cool completely in the tin.

4. Cling film the cake, and feed the cake 2 tbsp of brandy every week. Make it ahead of Christmas and it will be a really boozy cake.

Don't forget to decorate the cake with marzipan and icing.

Chicken Biryani

For those who love curry but can't handle the hot spices this is perfect for you. If you want to add a bit more heat choose a hotter curry paste and add a hot curry powder to the pan after cooking the chicken.

Serves 6

300g Basmati Rice
Knob of Butter
120g Raisins
60g Almonds
4 Chicken Breast, diced
Coriander, torn up
750ml Chicken Stock
2 Medium Onions, finely chopped
4 Tbps Curry Paste (I used Korma)
200ml Yoghurt
6 Naan Breads
1 tsp Turmeric
1 Pinch Saffron
1  tsp Cinnamon
1 Bayleaf

1. Melt the butter in a wok and fry the onions until they begin to soften. Cook the chicken until it begins to turn white.

2. Add the saffron, cinnamon, turmeric and curry paste and cook for a minute. Then add the rice to the pan so that the flavours can be absorbed into the rice. Cook for a further minute.

3. Add the stock, yoghurt, raisins and the bay leaf. Bring to the boil then reduce the heat so that it simmers. While it cooks check ever so often so that it isnt sticking to the bottom of the pan. If the rice hasnt cooked enough when the stock evaporates add more chicken stock.

4. Just before it finishes cooking add the almonds and coriander.

5. Serve with the naan bread.

Rhubarb Crumble (V)

A classic pudding ready to harvest for this time of year. Perfect with custard

Serves 8

Crumble
180g Plain Flour
120g Butter
2 tbsp Almonds
110g Brown Sugar
3 tbps Oats

8 sticks of rhubarb
130g Caster Sugar
2 tbps Runny Honey
1 tsp Ginger

1. Preheat the oven at 180c/160c fan assisted.  Wash and cut the rhubarb pieces into 2 inch pieces. Put into a dish and roast in the oven for 15 minutes with caster sugar and a bit of water.

2. While the rhubarb is in the oven make the crumble. Get a mixing bowl and rub the butter, flour and brown sugar between the fingers until mixed in and crumbly.

3. Once the rhubarb has finished in the oven add the ginger and honey. Sprinkle the crumble on top of the rhubarb. Then put in the oven for 30 minutes or when the crumble is golden and the rhubarb is bubbling.

Served with either; double cream, ice cream or custard.

Fruity Chicken Curry

I do love a good curry and making it yourself makes it taste all the nicer. This one is fairly simple and has a mild heat but if you want it hotter just use a spicier curry powder and adding some chopped red chillies to the recipe.

Serves: 2

1 Red Onion
2 Chicken Breast, chopped into chunks (1 Chicken Breast per person)
1/2 a mug of Dried Apricots, chopped
150ml Double Cream
500 ml Chicken Stock
1/2 a mug of Sultanas
1/2 a mug of Flaked Almonds
1/2 tbsp Curry Powder
1 tsp Cumin
1 tsp Turmeric
Salt and Pepper


  1. Heat a small amount of oil in a frying pan. Fry the red onions for a couple of minutes.
     2.  Add the chicken and fry until you cant pink. Then add the cumin, turmeric and curry powder to the pan and make sure it covers the chicken.

    3.  Add the chicken stock to part boil the chicken. Once the liquid begins to boil reduce the heat so that it simmers.

    4.  Add the sultanas, almonds and apricots. Once the liquid has reduced, add the cream. 

    5. Taste and season if needed. Serve.
